channelnya " sour.lotti" ya. Saya bikin dr 1 resep jd 2 macam, 1
bomboloni tabur gula tepung, 1 lg yg varian bomboloni crispy, caranya, stlh
final proofing balur kocokan putih telur lalu tabur panko. Br goreng. Grg cukup
balikan 1 x aja ya spy dpt white ring nya.
SWEET STIFF LEVAIN BUILD
30g Active Sourdough Starter (100% Hydration)
90g Tepung prot tinggi
41g air
15g gulpas
Overnight: 8-9 Hrs @ 23-24C *air-conditioned*
Room Temperature: 6 Hrs @ 28C
RECIPE
All of Sweet Stiff Levain
250g Bread Flour (12% Protein), me : 175 gr
strong flour + 75 gr med prot flour
4g garam
40g gula, me : 30 gr
120g Eggs (2 utuh & 1 kutel)
45g susu cair (dingin)
5g Vanilla Paste
60g Unsalted Butter (yg sdh dilunakan)
Kulit bag depan Fresh Orange, diparut. Me : gak
pake
CHOCOLATE CREAM FILLING
300g Whipping Cream/ Heavy Cream
30g gula
20g Cocoa Powder
CINNAMON SUGAR
1/2 cup gula
1/4 tsp Cinnamon Powder
Deep fry dlm minyak utk Sourdough Bomboloni
Atau
Bake di suhu 170C @ 15-20 menit kalo dibuat sbg
