Mashed Ingredients:
10 red big chilies
15 gr kunyit
38 gr ginger
10 shallots
6 garlics
5 candlenuts
Ingredients:
1 beef tongue
Some amount of water for boiling

2 tbsp curry powder
2 tbsp coriander seeds, grounded
1 tsp cumin seeds, grounded
1 tsp chili powder
1 tsp white pepper powder
45 gr galangal, crushed
2 stalks lemongrass, crushed
5 keffir lime leaves
10 cloves
1 cinnamon stick
1 star anise

Salt to taste

Rice flour 80 gr
.
Cooking oil
Instructions:
1. Cook the beef tongue to peel off the skin. Safe aside the broth.
2. After peeling off the skin, cut it dice.
3. Saute the mashed ingredients until fragrant.
4. Add the tongue cuts, followed by the broth (around 1 ltr) and all other ingredients, except rice flour.
5. Bring it to boil until the tongue cooked perfectly, then strain it.
6. Sew the tongue cuts on skewer, then grill.
7. For the gravy, mix the rice flour + a bit water (to dilute), then add it into boiling gravy slowly while stirring. Once the gravy thickened, turn off the heat.
8. Enjoy the beef tongue satay with the gravy.
